The Visionary Spirit: YVES and the Art of Tasmanian Honey The story of mielleRie began in Bourges, a medieval city in central France. Our founder, YVES, entered the world of beekeeping in his teens and mastered the principles of organic farming. In 2005, his journey led him to the pristine wilderness of Tasmania.
For decades, YVES has explored the vibrant life force of the island’s diverse flora, creating “raw honey” in its purest, most natural state. His meticulous techniques and profound dedication have earned him deep respect and admiration within the Tasmanian beekeeping community. We are honored to share with you the authentic, untouched flavor of Tasmania, handcrafted by a true artisan.

Australia’s Tasmania has been designated as a zero point (baseline) for environmental pollution by the World Meteorological Organization (WMO), and the honey harvested only at its apiaries is 100% natural and pure. It is extracted at low temperatures, with minimal filtration, and carefully bottled one by one.
☆ Method of collecting natural honey
All collection methods use organic techniques.
There are no residual chemicals in the harvested honey.
The beehives are not treated with chemical agents, and all equipment, including wood, is organic.
During filtration and packing, we value the natural minerals without heat treatment.
During the cold winter months, when the temperature drops below 15 degrees Celsius, crystallization begins.
The crystallization of honey is a natural phenomenon and does not affect its quality at all.
Crystallization is proof of 100% natural honey.
You can consume it without melting.
If you need to melt it, warm the entire bottle in lukewarm water at 35°C without opening the lid.
Please note that changing the temperature may alter the taste.
