The moment you taste it, the scent of flowers spreads throughout your mouth. You’ll be amazed as if you’ve wandered into a flower field. It’s honey with such a rich fragrance that it’s been called “edible perfume”.

 

 

 

Description

An ancient shrub that grows only in the cool temperate rainforests of northeastern Tasmania. It is said to take about 100 years to produce flowers and honey. It is named “Leatherwood” because its branches resemble leather. In the deep forests where people rarely venture, the leatherwood flowers bloom extravagantly in the summer, attracting bees.

Beekeeper YVES from mielleRie started beekeeping in his teens and grew up in the medieval city of Bourges in central France. He learned organic farming and established mielleRie in Tasmania in 2005. Since then, he has been exploring the diversity of flowers in Tasmania and continues to create honey close to nature. Tasmanian beekeepers seem to admire mielleRie.

Australia’s Tasmania has been designated as a zero point (baseline) for environmental pollution by the World Meteorological Organization (WMO), and the honey harvested only at its apiaries is 100% natural and pure. It is extracted at low temperatures, with minimal filtration, and carefully bottled one by one.

☆ Method of collecting natural honey
All collection methods use organic techniques.
There are no residual chemicals in the harvested honey.
The beehives are not treated with chemical agents, and all equipment, including wood, is organic.
During filtration and packing, we value the natural minerals without heat treatment.

During the cold winter months, when the temperature drops below 15 degrees Celsius, crystallization begins.
The crystallization of honey is a natural phenomenon and does not affect its quality at all.
Crystallization is proof of 100% natural honey.
You can consume it without melting.
If you need to melt it, warm the entire bottle in lukewarm water at 35°C without opening the lid.

Please note that changing the temperature may alter the taste.

※ Do not give honey to infants under 1 year old, as there is a risk of infant botulism.
