Kunzea ambigua — a member of the Myrtaceae family native to the sandstone landscapes of eastern Australia. Its flowers bloom only during a brief window in spring, and from those delicate blossoms, bees gather one of the rarest honeys in existence. The yield is roughly one-fifth that of other natural honeys — and once the season’s supply is gone, it cannot be found again until the following year. A true gift from nature.

That very first taste set a new life in motion — one that would revolve around the magnificent honeybee and the world’s finest honey. The path of a beekeeper who truly loves and dedicates themselves to the bees is never an easy one. Yet it is this very work — bottling nature’s gifts as they are, amid the rugged and breathtaking wilderness of Tasmania — that is the shape of their dream. The island of Tasmania, Australia, has been designated the “Zero Point of Environmental Pollution (baseline reference)” by the World Meteorological Organization (WMO) — a place where the air and water are remarkably pure. Our honey is 100% natural and raw, harvested exclusively from pristine apiaries in this unspoiled environment. It is cold-extracted to preserve its nutrients, minimally filtered, and hand-bottled one jar at a time with the utmost care.

· About Crystallization: Proof of Natural Purity
When temperatures drop below 15°C (59°F), the honey may solidify and turn white — this is called crystallization, and it is a sign that the honey is 100% natural. There is no issue with quality, and you can enjoy it just as it is.

  • To restore to liquid form: Loosely close the lid and place the jar in a warm water bath at around 40°C (104°F) for approximately 30 minutes.

  • Caution: Heating at high temperatures may alter the flavor and nutritional properties.

  • Important: Do not give honey to infants under 1 year of age, as it may cause infant botulism.
