This is a rare honey derived from the nectar of Kunzea ambigua blossoms. This remarkable gift from nature is ethically harvested once a year in spring, during a brief seasonal window, from bees that pollinate the native Kunzea ambigua flowers. The source of this honey — “Kunzea” — is a traditional healing plant nurtured by Tasmania’s natural environment. Sharing a similar potency to Manuka honey, yet with an exceptionally smooth finish, a single spoonful offers a truly special experience that nourishes both body and soul.

Our honey is 100% natural and raw, harvested exclusively from pristine apiaries in this unspoiled environment. It is cold-extracted to preserve its nutrients, minimally filtered, and hand-bottled one jar at a time with the utmost care.

When temperatures drop below 15°C (59°F), the honey may solidify and turn white — this is called crystallization, and it is a sign that the honey is 100% natural. There is no issue with quality, and you can enjoy it just as it is.

To restore to liquid form: Loosely close the lid and place the jar in a warm water bath at around 40°C (104°F) for approximately 30 minutes.

Caution: Heating at high temperatures may alter the flavor and nutritional properties.
